A beautiful book, full of color photo graphs of English gardens and country scenes as well as of such tempting creations as Preserved Peaches with Pistachio Cream or Raspberry Meringue Torte. Carey, a British food writer, first describes canning, pickling, drying, and other preserving methods and then includes recipes not only for an intriguing variety of preserves but also for complete dishes that can be made from them.
